Thumbprint Holiday Cookies

INGREDIENTS
• 1/2 cup almond butter (130 g)
• 1 cup almond flour (90 g)
• 3 Tbsp. honey
• 1/4 tsp. vanilla powder
• 1/4 tsp. baking powder
• Pinch of salt (optional)
• 1/4 cup Chopped almond
• 1/3 cup egg white
• St Dalfour Fruit Spread for topping
INSTRUCTIONS
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large bowl, combine the almond butter and honey, then add the vanilla powder, stirring until well blended. Add the almond flour, baking powder, and salt, mixing with a spoon or spatula at first. Use your hands to squeeze the mixture into a cohesive cookie dough.
- Place the chopped almonds in a medium bowl and pour the egg white into a small bowl. Scoop out about 1 to 1.5 tablespoons of dough, rolling it into a ball. Toss each dough ball gently in the egg white, then coat with chopped almonds.
- Arrange the dough balls on the prepared baking sheet, leaving about 3 cm between them. Press the center of each ball with your thumb or the back of a 1/4 teaspoon measuring spoon to create an indentation. Use a small spoon to fill each indentation with fruit spread.
- Bake the cookies for 8-10 minutes, or until the edges are golden brown. Allow them to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
- These almond butter cookies are delightfully nutty, slightly chewy, and perfect for any occasion. Enjoy!
